ours is a 2000 with the Cross Country under the back window
From what I notice the difference between the Xc and XC SE, The SE has the 16' wheels, wood steering wheel, better radio with cd changer built in, and booster seat. Thats from what I've seen. I've read here some don't have passenger power seats etc, so I could be wrong.
My XC isn't SE and doesn't have any of those mentioned, although I would like the steering wheel. I have power/heated seats, dual temp, 15' wheels (ugly lol), home link, trip computer, and a rear cd changer which I might sell (ebay) along with the volvo radio I took out for the pioneer.

I have a 2000 V70XC SE in black over graphite with the 16" wheels (see pic, after painting calipers red). I was at a dealer recently looking at upgrading to a 2004. When I mentioned to the salesman that I had a 2000 and pointed to the car about 100 yards away, he immediately said "Oh, the SE model." I asked how he could tell from that distance and seeing only the side of the car. He said it was the wheels, they only came on the SE. He also told me the SEs were built at the end of the production run of the 2000. They knew they were going to come out with the new body style for 2001, so the last how-ever-many of the 2000 production run got all the options (and I do have the power passenger seat) mentioned here in this thread, along with the wood trim, tossed in as "standard" and badged as SE.
After learning that, and not being too impressed with the 2004 I drove, I decided to keep my "Special Edition" and see if I can make it to 200,000 miles. I bought mine in Alexandria, VA in Nov 2003 with 47k for $23,000. Even though I have been sinking some major dollars into it lately (now with over 102k miles) I still love the car.

I know it's been a few years since the last post, but I recently bought a 2000 V70 XC SE, one owner car with 85,000 FSH for $5000 as a daily runner and couldn't be happier. There were three dings on the sides which I had taken out, but the rest of the body work was in great shape. My daughter and I spent a couple of hours last Sunday cleaning her and she looks (and drives) wonderful. It even has the original window sticker in the Owner's Manual case which I can post for anyone who wants to know what the XC SE had as extra over the regular XC.

Different Wheels
Booster Seats
Wood steering wheel
THAT's the only difference, period
My 2000 V70 XC SE has "Cross Country" on the tailgate. I usually keep it covered up with black vinyl tape - I like the plain window. I would post a picture but I am a tad out of the country right now. Also, I paid $7k for mine about two years ago with 130,000 miles on it. It was near showroom condition and I have had almost no trouble with it since.
2000 V70 XC SE
165,000 miles and runs great.
Total repair costs over last 65 months: $720 (about 1.5 car payments);
Best single tank mileage ever: 32.8; Average mileage: 22.2; City: 18
The big Cross Country on the hatch is only a decal and does come off
