I read that the oil level-sensor and the oil-quality sensor need to be reset when
the engine oil is replaced.
I also read that it isn't possible to do so yourself, not even with Vida.Dice.
Any idea if this is true or not?

I recently changed the oil in our 2016 S60 and did not reset anything or even know that it was possible to do that. It will be interesting to see what responses your question generates.
