How does the Volvo AWD compare to the Subaru? Is one system "better" than the other, or do they each have their pluses and minuses?

I think it's nothing new to you:
They have different technology/ideology.
Subaru uses full-time AWD, while Volvo uses spare-time AWD. You can get some details at Subaru's site (mainly not about the technology itself, but about what their dealers feel to tell to customers).
Volvo XC70 is firstly FWD, and when the system feels the need, the torque is sent back and AWD mode is activated.

The difference is not only in the AWD system. Volvo uses a very refined STC/DSTC technology for tracktion control. Subaru's brochures are also marketing this, the top is VDC, that seems to me similar to DSTC.

If we are lucky, there will be someone, who have tested the two system in similar conditions. I'm eager to hear his/her opinion.
